Midori Acres is located in beautiful Northern New Mexico in Taos. We wanted access to better quality, local fresh vegetables through the winter months and decided to start to try to grow microgreens for ourselves at home. That way we would have non-stop fresh produce available to us anytime we wanted. Microgreens are packed full of vitamins and minerals, they are considered a superfood, and have up to 40 times more nutrition in them than their adult versions. Microgreens have a much shorter grow cycle and reach their peak potency 10 days after planting. Since they are grown vertically indoors, they are available to us year round. Microgreens use much less resources than the adult plants. Adult plants take more water, time, energy, and fertilizing to get to their harvesting point. In most cases it takes months to grow an adult vegetable. By that time all of the plants' resources have gone into producing the adult vegetable, its nutritional value has decreased significantly from what it was when it was in the cotyledon stage.
Microgreens are used as both a visual and flavor component, primarily in fine dining restaurants but you can take your plates to new heights just by adding microgreens. Chefs use colorful microgreens to enhance the attractiveness and taste of their dishes with distinct delicate textures and unique flavors, such as sweet and spicy. Have fun playing around with the different flavors and adding them to some of your favorite dishes you cook at home.
